We had another busy week with new, tasty beverage reviews to share. This week we have four new beer reviews, and eight new wine reviews. Enjoy!

The BevX reviews are like no other. We evaluate wines, beers, and spirits breaking down elements of appearance, aroma, flavor, texture and intensity as well the product’s “cool factor” and value. We also offer analysis on the creation of the beverage as well as any interesting points that make it unique. Finally we offer suggestion on how to enjoy the beverage including pairing and cocktail suggestions.

Chimay Première (Belgium)
Bright chestnut with thick, white, rocky head. The nose is alluring and complex with scents of dense malt, earthy aged hops, and dried fruits with accents of bread dough yeast, caramel, and brown spices. The palate echoes the nose delivering a malty core with flanking notes of hops and earth. Medium-bodied with a creamy core while offering perfect balance and harmony.

Chimay Cinq Cents (Belgium)
Deep golden color with a thick, creamy head. The aromatics are wonderfully floral with sweet hop notes mingling with malt and fresh citrus zest supported by subtle earth and herbal accents. The palate confirms the nose delivering a dry, dense malt core with assertive flanking notes of spice and earth with bright citrus. Medium to full bodied with ideal balance thanks to a bright dose of acidity and fresh citrus notes.

Chimay Grande Réserve (Belgium)
Deep amber with a thick, creamy head. The nose is complex and exciting with waves of dry and sweet malt with supporting dried fruits, caramel, spicy hop accents, and hints of baking spices and balsamic. The palate echoes the nose with a dense fruit and malt driven core flanked by spice, hop, and concentrated ale notes with trailing notes of allspice. Full-bodied with dense and creamy malt that is kept perfectly balanced with a bright dose of acidity.

Chimay Dorée (Belgium)
Pale, golden straw color with a thick white head. The spices jump from the glass with malt and citrus notes filling in the core. The palate echoes the nose with bright citrus accents enveloping the vibrant malt core. Medium-bodied while being clearly the lightest of the Chimay portfolio. Chimay’s version of the session Ale.

Carol Shelton “Wild Thing” Chardonnay Sonoma County 2015
Brilliant, light green/yellow color. The nose is moderately intense offering scents of honeysuckle, lychee, and pear with supporting notes of kiwi and lemon curd. The palate confirms the nose delivering a green fruit-driven core with flavors of minerals and flowers. The finish is crisp with a dose of citrus zest. Medium-bodied and nicely balanced with a vibrant texture.

Carol Shelton “Wild Thing” Old Vine Zinfandel Mendocino 2014
Bright, medium ruby color. The aromatics are very intense offering scents of black cherry, boysenberry, and raspberry with supporting notes of plum, slate, and vanilla. The palate confirms the nose delivering a red and black fruits-driven core with flavors of freshly crushed berries. The finish is long and lingering with supple tannins. Medium to full-bodied and nicely balanced with a velvety texture.

Tablas Creek Esprit de Tablas Adelaida District 2014
Brilliant, deep garnet color. The aromatics are very intense offering scents of black currant, earth, and blackberry with supporting notes of truffle, anise, mineral, and baking spices. The palate echoes the nose delivering a black fruit-driven core with flavors of black plum and cured meat with hints of sea salt and cocoa nibs. The finish is long and lingering with chewy tannins. Full-bodied and perfectly balanced with a rich and dense, nearly chewy texture.

The nose is moderately intense offering scents of black cherry, blackberry, and raspberry with supporting notes of black tea, rose petals, and mineral with hints of wild mint and honey. The palate confirms the nose delivering a black fruit-driven core with flavors of cassis and forest floor. The finish is long and lingering with supple tannins and hints of pepper. Full-bodied and perfectly balanced with a opulent and juicy texture.
