Commodore Jock
The Commodore is a classic old cocktail is included in the Old Waldorf-Astoria Bar Book and relies upon Rum as its Spirit of choice. It is also quite sweet, as were many cocktails of its day, and contained an egg white for thickening. Through the years, the Commodore has been turning-up as a Whisky cocktail featuring both Bourbon and blended Scotch Whisky.
We prefer to utilize Scotch Whisky and have therefore dubbed it the “Commodore Jock” (reference Jock Tamson's Bairns) to make it definitely Scottish. Unlike the original, our version is as tart as it is sweet and makes a great aperitif.
Method
Pour all ingredients into a cocktail shaker one-third filled with cracked ice. Shake well and strain into a chilled cocktail glass. Skip the garnish in favor of quality orange bitters.
