Kir Royale
A classic Champagne cocktail. There are many variations on the classic Kir; a simple but delicious cocktail that is comprised of white wine and crème de cassis. The Kir Royale is the most popular of these variations substituting Champagne or sparkling wine for the white wine.
This simple cocktail acts as a great greeter setting the mood before a dinner or a brunch gathering. In addition to it being delicious, it requires no special bartending skills and can be made by the most timid home mixologist.

Ingredients
1 oz. Creme de Cassis
4 oz. Sparkling wine
(We like a quality classic method bubbly such as Cava, TrentoDOC, Franciacorta, or Cremant.)
Occasion
Serve any time of the year when a festive drink is called for.
Method
Pour the crème de cassis in to the bottom of the glass and then slowly add the sparkling wine of your choice. Garnish with a lemon twist or a single fresh blackberry or raspberry. As always, do use a sparkling wine for this cocktail that does not cut it as a solo performer.
Variations
A similar cocktail can be made by combining any fruit-based Liqueur with sparkling wine. Great choices include Crème de Mûre, Crème de Pêche, and Crème de Fraise.
