This is a super tasty and quick dish that fills your kitchen with the aromas of summer cooking. It perfectly shows off both top quality shrimp and Tequila with support from chili and garlic. This dish also benefits from being dead easy to prepare while offering a wow factor to your friends and family.
If you can’t find fresh shrimp where you are you can likely find quality frozen shrimp. To perk up your frozen shrimp defrost in a large bowl of cold water that is heavily dosed with sea salt. This will not only add flavor but it actually firms up the texture and makes them smell like shrimp fresh from the water.
Serve with Tequila, a Tequila Cocktail, Riesling, or go the Beer route with a Wit or Saison.
Ingredients for Tequila Shrimp
- 2 tablespoons olive oil
- 2 shallots, diced
- 2 cloves garlic, minced
- 2 tablespoons seeded, chopped jalapeño chile
- 24 medium shrimp, peeled & deveined
- 2 oz. Tequila
- 3 Roma tomatoes, diced
- 2 limes, juiced
- .5 teaspoon agave syrup (can substitute honey)
- 1 tablespoon chopped cilantro
- Salt and fresh ground black pepper
Method
In a hot sauté pan with the olive oil, saute the shallots, garlic, and jalapeño for one minute. Then, add the shrimp and continue to sauté for three minutes. Then add the tequila and flame off the alcohol. Add the tomatoes and sauté for another minute. Then add the lime juice and agave syrup. Toss well and then add cilantro, salt and pepper.
