Analysis
This style of Rosé really gets us excited. We love the perfect balance of fruit and acidity with more generous fruit than you would think considering its very modest alcohol — just 12.9 abv. The Grenache for the 2019 2Hawk Rosé remained on the vine two weeks longer than the typical year until it was just right. Two hours in the press was all that was required to extract the beautiful salmon color that you see in the glass. A touch of Syrah was added to stabilize the color (Grenache Rosé can shed its bright color quickly without losing flavor or aromatics). This wine was bottled in late March after resting in stainless steel tanks. The resulting wine is absolutely delicious and impossible to put down. The contents of the bottle just vanish.
How to Enjoy
Serve chilled but not too cold as you don't want to mute the flavors. Pour your glasses a few minutes before you plant to drink it. Serve with charcuterie, smoked salmon, and salty, hard cheeses.
