Analysis
The grapes for this delicious and classic Rosé are sourced from three appellations in Paso Robles. The 2021 vintage began after a chilly and relatively dry winter. This resulted in small clusters and berries with total yields down about 25%. However, the growing season was great with hot periods followed by cool stretches. The resulting fruit was concentrated and intense with high acid levels — the highest since 2011. This Grenache-dominated rosé (79% Grenache, 15% Mourvedre, and 6% Counoise) is fermented and rested in stainless steel to retain its fresh flavors. A majority of the grapes are direct pressed into stainless steel tanks while 20% of the grapes are cool soaked for much of the day to extract color and structure. Patelin de Tablas Rosé is redolent of great Southern Rhône and Provence Rosés that feature fresh red fruits with bright, fresh acidity. The intensity of their 2021 fruit results in a Rosé that is generous in fruit while vibrant with acidity.
How to Enjoy
This beauty needs nothing but a glass but it's great with grilled or fried chicken, sushi, and smoked salmon.
