We were smitten with this singular Gin from the very first sip. The corn-based spirit is the ideal blank canvas for the clever blend of botanicals that are the true star of this spirit. Waterloo crafts its Gins with the intention of keeping the juniper element as a supporting player rather than the focus. The Waterloo Prickly Pear & Rose Gin is made with a botanical blend that includes prickly pear, rose petals, hibiscus, juniper, lavender, grapefruit, pecan, orris root, coriander, anise, ginger, and licorice root. The first three botanicals really pop with the hibiscus, creating a raft of aromatics for the other fruitier and higher-toned elements to mingle. The root additions offer subtle accents that appear on the finish. We don’t often talk about the packaging, but it must be mentioned that this craft brand has hit a home run with their labels and bottle choice.

Brand Story

Waterloo Gin Company was founded in 2009 by Daniel Barnes and developed at Treaty Oak Distilling in Dripping Springs. Waterloo Gin was born as a celebration of place: Austin’s original name (Waterloo) and the botanicals of the Texas Hill Country. From its first release—the signature Waterloo No. 9—the brand aimed to create a distinctly Texan interpretation of gin, using limestone-filtered spring water and locally sourced ingredients such as lavender, grapefruit, and pecan. They have grown into a national brand, earning critical acclaim and cultivating a loyal following. Their current portfolio includes three gins: the original No. 9, a barrel-aged gin, and the unique Prickly Pear & Rose Gin. While the contents in the glass remain the focus, Waterloo Gin is presented in a striking package that stands out in the craft spirits sector.

Tasting Note

Brilliant, alluring, salmon pink color. The nose is wonderfully floral and fruity, with scents of hibiscus flowers, rose petals, and red grapefruit zest, along with subtle notes of raspberry and slate. The palate is in complete agreement with the nose, delivering a three-dimensional expression of the aromatics with supporting notes of juniper and lavender. How to Serve

This Gin is highly versatile. We love it in their signature Waterloo Prickly Pear Collins but it’s equally at home in a Negroni and tasty in a Gimlet.
