Waterloo Prickly Pear Collins

The classic Tom Collins has been a staple in cocktail recipe books for well over a century. It proves that less can be more when presented in perfect balance. The Waterloo Prickly Pear Collins is a perfect riff on the classic, with this Gin being truly elite, delivering both familiar and unfamiliar aromatics and flavors to Gin drinkers. The stunning color completes the package, and if you can find some prickly pear for the garnish, you are winning the cocktail game.

Ingredients

2 oz Waterloo Gin, Prickly Pear & Rose
1 oz simple syrup
1 oz fresh lemon juice
4 oz  - 6 oz soda water
prickly pear slice, for garnish
lemon twist, for garnish

Occasion

The classic Tom Collins is often served as an aperitif, and we would put this tasty variation in the same position. It works well no matter the season, and it always gets the appetite flowing.

Method

In a cocktail shaker, combine lemon juice, simple syrup, and ice. Shake until chilled. Strain into a Collins glass filled with ice. Top with soda water and float Waterloo Gin on top. The float construction method creates a beautiful visual. Feel free to encourage your guests to mix the drink once they've given it a visual appreciation. Stirring the drink will balance the flavors and create a tastier cocktail.
