BevX Piña Colada Mix
Using a store-bought Piña Colada mix will yield a cocktail that smells and tastes a lot like a sweet tanning oil. My Piña Colada mix is all about fresh ingredients in the right proportions yielding a vibrant, tropical flavor explosion that nearly begs for Rum! This will change the way you feel about the Piña Colada cocktail.
Ingredients:
- 16 oz. Fresh Pineapple Juice (fresh cut fruit run through a juicer)
- 8 oz. Coconut Milk (not the sweetened coconut cream)
- 2 oz. Agave Nectar
- 2 oz. Fresh Limejuice
- 2 oz. Ginger Syrup (see recipe below)
Ginger Syrup
- 16 oz. Water
- 1/2 cup Peeled and Minced fresh Ginger
- 6 oz. Agave Honey
- 1 oz. Limejuice
Piña Colada Mix Instructions: Bring all of the ingredients together and mix well. If the coconut milk wants to clump a bit give the mixture a spin in the blender to emulsify. Store in the fridge in an air-tight container and waiting to join your cocktail.
Ginger Syrup Instructions: Bring the water to a boil and then stir in the ginger. Remove it from the heat and cover for two hours. Strain the liquid pressing down on the ginger to extract the liquid. Add the agave honey and limejuice stirring to combine. Cool and store in an airtight container. The yield is roughly 30 ounces. (This syrup is great with both Rum and Whiskey in numerous cocktail applications.)
