Pineapple Ginger Daiquiri

The Daiquiri is anything but passé when you use quality Rum, fresh ingredients, and a little care. Pineapple is a flavor that just screams summer (or a hopeful spring). The problem with pineapple is that it is most often (in drinks, desserts, and candies) overly sweetened, which is ridiculous as the fresh, natural sweetness of pineapple is perfect without extras. This is where it's very handy to have a juicer. Making your own pineapple juice ensures a great finished product. Add the flavors of ginger and a touch of bitters and you have an unexpected cocktail variation that is hard to stop sipping. Caution, these go down with great ease…

Ingredients

1 1/2 oz. Quality White Rum
1/2 oz. Ginger Liqueur
1 oz. Fresh pineapple juice
1/2 oz.  Fresh limejuice
1 dash bitters

Occasion

Bring this cocktail out when the sun hangs longer in the post work sky and it's short sleeve weather. This cocktail batches really well so it is great for a gathering on the patio.

Method

Add all ingredients to a cocktail shaker along with a handful of ice. Shake vigorously to create a bit of foam and a proper marrying of all of the elements. Strain into a chilled coupe glass and enjoy. Garnish with a lime wheel if you like.

Variations

Feel free to use a dark, aged Rum just be sure that it's not too woody and that it has plenty of youthful vigor.
