Most people assume that the Margarita is the national cocktail of Mexico. Well, it’s not – it's the Paloma. La Paloma (the dove in Spanish) is just about the most refreshing cocktail on the planet. It’s super easy to construct and when the sun’s heat is on La Paloma comes to the rescue.
2 oz. Quality 100% Agave Blanco Tequila
the juice of half a lime
Grapefruit Soda (Jarrito is preferred)
pinch of salt
Whenever the mercury rises and the sun bakes the pavement La Paloma has what it takes to refresh.
Build this drink in a tall glass. Fill three-quarters full with ice. Add the Tequila, limejuice, dash of salt, and top with the grapefruit soda. Garnish with a lime or grapefruit wedge. Enjoy.
This simple cocktail is in no need of tinkering but a quality reposado with a subtle wood accent is just as good as a blanco Tequila. Mezcal too can be used but we prefer Tequila for this classic drink.
