Bee's Knees

This great and tasty classic cocktail dates back to Prohibition days. The slang term meaning "the best" is perhaps out of date for some but the drink is always welcomed. It is widely believed that this recipe was created to mask the harsh flavors of bad and perhaps illicit Gin. You can do what we do and use really good London Dry Gin the Bee's Knees.

Ingredients

2 oz. Gin
3/4 oz. Lemon juice
3/4 oz. Honey syrup

Occasion

This lovely classic cocktail can be enjoyed anytime but it's perfect in spring when the bees are buzzing. It's absolutely refreshing and the tart lemon and sweet, rich honey are perfect mates.

Method

Add all ingredients to a cocktail shaker with a scoop of ice. Shake well and strain into a chilled coupe glass. Garnish with a lemon peel.

Variations

There are variations to be found but I don't recommend veering far from the plan. Besides, your choice of Gin will make all the difference in the world.
