Island Hopper

If the grasshopper where native to the Caribbean I imagine that it would look and taste a lot like this. Imagine sipping this on a private deck overlooking the sea. Whatever you do don't kill the moment with Jimmy Buffett.

Ingredients

1.5 oz. Quality White Rum
1 oz. Crème de Menthe, Green
1 oz. Coconut milk
1/2 oz. simple syrup

Occasion

This is a summer drink that can do well in cool weather if the mood is right.

Method

Shake all ingredients well and strain into chilled coupe or cocktail glass or serve over ice in an Old Fashioned glass. I like the on ice method as it's more refreshing. Garnish with a lime wheel or mint leaves.

Variations

You could use white Crème de Menthe if you want to provide a stealthy mint infusion. You can loose the simple syrup and add a 1/2 oz. of Coconut Liqueur.
