Analysis
The Hamilton Pimento Dram was born out of need. Bartenders across the nation sought an authentic Pimento Dram for their Rum and Tiki cocktails. Sadly, we haven't had many great choices as the products we could find were often inconsistent, expensive, or just awful. Ed Hamilton, Rum importer and authority searched Jamaica for a great Pimento Dram to export but came up empty. Failure wasn't an option so he got to work at Five & 20 Spirits in New York to create the Liqueur in America using Jamaican ingredients. Hamilton Pimento Dram is a blend of light rum from the Worthy Park Estate (Vale of Lluidas, Jamaica), Jamaican allspice, and sugar. It took two and a half years to get the balance right and the end result is nothing short of a pure essence of Jamaican allspice. Enjoy.
How to Enjoy
Hamilton Pimento Dram has thousands of uses in cocktails mixing great with Rum, Whiskey, and Gin to name a few base spirits. A little goes a long way as the flavors are bold. It also has many applications as a culinary ingredient in both sweet and savory dishes.
