Beverage of the Week (BOW)

Tralee 15 year old Irish Pot Still Whiskey

Product Story

This great Whiskey is 100% Irish Pot Still Whiskey aged in Sherry butts that had previously aged Irish Whiskey. Many of the casks were fairly neutral but a complex and supporting Sherry note can certainly be detected. The constant temperature and high humidity of the cavern made for a unique and perfect maturation. There is not hint of alcohol heat to mask the layers of pure Whiskey flavors. This Whiskey is a vatting of Whiskies ranging in age from 15 to 19 years.

Brand Story

It's not every day, or every year for that matter, that a great spirit like this is lost and then found. Nearly 30 years ago a group of businessmen and Whiskey enthusiast conspired to obtain the best Irish Pot Still Whiskey in its youth and then age it in seasoned Sherry butts in secret limestone cave in County Kerry. They add new casks to their stash each year for four years until funds for the project diminished. Nearly two decades later one of the remaining partners, Brian McCarthy, sampled the casks, that had then ranged in age from 15 to 19 years old, and found them to be at their peak. He transferred the liquid gold to a single stainless steel tank just outside of Dingle. For a decade McCarthy was engaged in difficult negotiations with the remaining partners and heirs. For a time it looked as if this lovely Whiskey would never be bottled. Luckily, an agreement was made in 2014 that allowed the Whiskey to be bottled and sold with just one hitch. No agreement could be reached regarding distribution in Ireland so it was agreed that the entire production was to be sold in America. Tasting Note

Brilliant bronze to amber color with thick, viscous legs visible on the glass. The aromatics are incredibly complex and seductive offering scents of caramel orange peel, clover honey, baked apples, roasted grains, brown baking spices, oak, and toffee. The palate is equal to the nose offering a lush core of sweet fruit and spiced laced malt. Perhaps the greatest asset is the rich and chewy texture that gives this great Whiskey heft and length.

How to Serve

Don't dare mix this with anything but a splash of water and do be sure to add the water as it does make this lovely beast.
